  1. For the salad: Add pomegranate seeds, pears, baby greens, and mint to a large serving bowl, and toss.
  2. For the vinaigrette: Add the olive oil, vinegar, honey, lime juice, and salt and pepper to a glass jar with a lid. Shake vigorously until well combined.
  3. Drizzle the vinaigrette on the salad a little at a time, tossing as you go, until the salad is just coated.
  4. Top with the feta cheese, pecans and the extra 2 tsp. fresh mint.

Tips

This salad is also very tasty without the feta, for a vegan option.
